Let’s talk about kinilaw. It’s this Filipino ceviche where tiny, raw cubes of fish are marinated in vinegar with vegatable and spices. Here comes Enting, known as the “kinilaw artist” (yes, it’s a thing), making sure these delicate, fresh cubes of fish are the very definition of perfection . Their kinilaw is a masterpiece.
Then there’s their fried chicken. Oh, that crispy, out of this world chicken skin. It is meant to rock your world. I usually order the isol (chicken ass), if that’s your thing too, you won’t regret it. They also make unbelievable lechon baboy and lechon baka. I have to say, this place is downright superb.
