Chef O’s Bistro may have only opened late last year but it has already been making a buzz in the Bacolod food scene. This laid-back resto has an awesome selection of grub and boasts a slick, minimalist interior. Plus, they know good beer. Their Buffalo chicken skin (105php) is this crispy chicken skin tossed in Buffalo sauce and served with blue cheese dip. To die. Definitely one of those dishes that you’ll cry over in your sleep, waiting for the day you’ll get to taste it again. Which happens to me quite a lot, for some reason.
And, it goes perfectly with their locally brewed beer, Talulah. You shouldn’t miss this match made in heaven. Damn. Because I couldn’t choose just one kind of burger, I had their Burger Sampler (230php) which includes three kinds: Classic, Garlic and BBQ. I especially enjoyed the BBQ burger, it comes with bacon, fried onions, cheese and of course, BBQ sauce. The BBQ pork ribs (195php) is a bestseller. It’s juicy, tender and hella good. I sampled the Cebruery beers, too. My personal favorite, the Blonde Ale.
It’s a joy to be able to enjoy top-notch food with great selection of beers. For me, that enhances the whole experience. Chef O’s Bistro also serves Asian dishes like tinapa roll (160php), Tom Yum soup (155php) and Thai herbed chicken in lemongrass skewer (190php).
